Cava has had a rough ride recently, with its fan base distracted by that scene-stealer from Italy, Prosecco. We need to rediscover cava because if you can find a good one, you get so much more flavour and class for your money. L’Atzar isn’t made by one of the big cava houses, it’s a small venture with relatively tiny quantities of wine, but plenty of personality. If you haven’t tried cava for a while, please give this a go. It’s lemony fresh with a hint of aromatic herbs and it’s a great way to welcome guests. Make it the star of an evening in, and serve with tapas ? nothing fancy, just a few almonds and olives would work sublimely well.
